Peanut Butter Blossom Rice Krispy Treats


Hello. My name is Summer. And I am a peanut butter addict. I have been 2 hours sober.

Peanut butter, can there be a more perfect food? Because in my world, peanut butter rules. I mean you can get it smooth, you can get it crunchy, you can get it honeyed, spiced, organic, etc... There's peanut butter Cheerios, peanut butter and jelly, peanut butter cookies, peanut butter candy... You can eat it on bread, you can eat it with celery, you can eat it by the spoonful... There is really no limit.

But lately I think I've been overdoing it a bit. You know when peanut butter starts showing up on the grocery list as often as milk and bread does there's a problem.


So I've decided that's it. It's time to quit. Cold Turkey. I'm done with you my peanutty spread. My breakfast  lunch, and dinner condiment. My midnight snack. We are going our separate ways.  According to the 3 Step Plan I adopted about 20 minutes ago the 1st step is to be conscious of your addiction, the 2nd is to put it in writing. Check, check. The 3rd is to find a replacement for your habit. I first considered Nutella but I think that defeats the purpose. So I am currently open for any suggestions.

So as a conclusion to this stage in life I made Peanut Blossom Rice Krispy Treats! Ahem. These treats start with a delicious peanut buttery base. Then on top I smooshed a delicious Rolo. I know the traditional cookies use Hershey Kisses, but I didn't have any in stock and I think the ones made with Rolos are just as good if not better! But feel free to use Kisses if you must. So dig into those cupboards and enjoy a hearty spoonful or two of peanut butter while making these Peanut Blossom Rice Krispy Treats. Do it for me. Do it for you.

As for me, like I said, I'm quitting peanut butter. For Reals. At least until the next time I walk into my kitchen...

Peanut Butter Blossoms Rice Krispy Treats


Peanut Blossom Rice Krispy Treats

3 Tbsp butter
1/2 cup Peanut Butter (aka: nectar of the Gods)
6 cups marshmallows
6 cups rice krispies
Rolos or Hershey Kisses (you'll need about 25 pieces +/-)

Pour the rice krispies in a large mixing bowl. Set aside.

Melt the butter and peanut butter together in a saucepan over medium heat until melted. 
Turn the heat down to the lowest setting and add the marshmallows. Stir until the marshmallows are all melted (this will take a few minutes--low and slow is key for perfect texture)

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Now here you'll want to work quickly. With lightly greased hands, shape the mixture into individual cookies (I made mine with about a 2 inch diameter) and place on a greased cookie sheet. While still warm (that's why we're working fast) press a Rolo/Hershey Kiss into the center of each "cookie". This way the bottom of the candies will melt 
slightly from the heat of the mallows, mmm....

Allow them to cool about 20 minutes, then enjoy!

  2. Oh, I am an addict too, but only in baking. I buy it every week! These are great, rolos and anything are good with me! How about cookie butter? Probably a good replacement, ha!
