Root Beer Float Rice Krispy Treats

There are some things in life that should always make the "Nothing Feels Better Than ____" list. For example, I can pretty much guarantee every time I take off a pair of high heels I will loudly proclaim, "NOTHING feels better than taking off a pair of heels!"

Although I have a list of several things that make this "Nothing Feels Better Than" list:
- an emptied dishwasher
- freshly mopped floors
- being the first person to open a jar of peanut butter
- The middle bite of a grilled cheese sandwich (the one that is pretty much 90% cheese)
- blowing all your birthday candles out in one breath (which is getting harder to do the older I get...)
- getting into warm clothes after being in the snow
- putting on a new pair of socks
- a good morning stretch
- a cold Root Beer Float on a summer night. Yum.

Root Beer floats, can there be anything that has a more summery, barbecue feel to it? Seriously. All I can think of is a giant cup, brimming with soda and vanilla ice cream as I sit out by the pool with the grill going next to me. Mmmmm perfect. These needed to be made into a rice krispy treat. Pronto.

This recipe is actually really simple. The root beer extract pretty much does all the work for you. I used my base rice krispy treat recipe, then just replaced the normal vanilla with some good old root beer extract. Then, to bring in the creamy aspect, we top them off with a nice layer of white chocolate. I'm telling you guys, these things taste so good. All the sugary, creamy goodness you get in the normal root beer float in bite sized form! What more could you ask for?

Root Beer Float Rice Krispy Treats

5 Tbsp butter
6 cups marshmallows
1 tsp root beer extract
6 cups rice krispies
1 cup vanilla flavored almond bark


Pour the rice krispies in a bowl and set aside. Melt the butter in a saucepan over medium heat. Turn the heat down to the lowest setting and add the marshmallows. Continuing stirring until mostly all melted, then add in the root beer extract.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and light press into the pan with greased hands. Meanwhile melt your Almond Bark in the microwave at 20 second intervals until it is all melted. Pour/spread this goodness all over your treats. Allow to fully cool for about 20 minutes. Enjoy!
