Divinity Rice Krispy Treats


Oh my gosh, have I got a winner for you today. Get ready for this one people.

My husband is out of town for work this week. I hate it when he's gone, not only because I miss him, but also because that means my standard of eating decreases about tenfold. Somehow graham crackers dipped in frosting becomes breakfast. Cereal is considered a totally well balanced meal. Peanut Butter gets spread on everything. Everything.



You know you've reached an all time low when you're spraying the whipped cream directly into the ice cream carton because you're going to finish the rest of it anyways you don't want to dirty another bowl. Ahem.

Ah... I tell myself every time he leaves I'm going to eat healthy, well balanced meals. It never works. Somehow the lazy college student eating style in me comes out.

Well, what else can I do but embrace it? So today I have made something that is 100%, indulgently delicious. Divinity. I don't think there is a more perfect name for this holiday candy because honestly it is Divine.

I can't lie, I was initially going for a nougat rice krispy when I started this. I attempted a shortcut version of homemade nougat made with Cool Whip and chocolate chips that was a total bust (typical). So back to the drawing board. I found this recipe that called itself "Divinity Nougat", so I went for it.

Yes, this must have been divinely inspired because this turned out to be the best thing that has ever happened to me. (minus my husband, child, etc..) This is an airy, light, melt-in-your mouth candy that I cannot stop eating for the life of me. It's different then your typical Milky Way nougat so I thought best to label it as just Divinity so as to not confused anyone. But seriously this stuff was perfect. It kind of melted into the warm marshmallows on the edges while also added this airy, sugary bites throughout the treats. I'm trying to think of more descriptions to help you understand how yummy this is. Writers Block. I'll just say I'm surprised I managed to get a picture of these before I ate them all. Husband please come home.

Ok, go make these, I command you. You'll thank me later. Now I got some leftover Divinity calling my name...

Divinity Rice Krispy Treats

Divinity Rice Krispy Treats

3 Tbsp butter
6 cups marshmallows
1 tsp vanilla
1 Tbsp malt powder
5 1/2 cups krispies
1 recipe of homemade Divinity, chopped into shards/pieces (recipe below)

Pour the rice krispies and divinity pieces in a large mixing bowl. Set aside.

Melt the butter in a saucepan over medium heat. Once melted t
urn the heat down to the lowest setting and add the marshmallows. Stir until the marshmallows are mostly all melted (this will take a few minutes--low and slow is key for perfect texture). Then add in the vanilla and malt powder.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump everything into a greased 9x9 pan. Let it sit for about 5 minutes, then with greased hands go in and flatten the top. Allow them to cool about 20 minutes. Enjoy!

Divinity Rice Krispy Treats


Homemade Divinity
1 1/2 cups sugar
1/4 cup corn syrup
1/3 cup warm water
1 egg white
1/2 tsp vanilla

Beat the egg white with a beater for about 2-3 minutes, until stiff peaks form.

Meanwhile combine the sugar, corn syrup and water in a saucepan over medium heat. Stir constantly until the sugar dissolves. Then continue cooking without stirring until it reaches 250 degrees (use a candy thermometer). Slowly pour about half of the sugar syrup into the egg whites, beating constantly.

Cook the remaining syrup until it reaches 270 degrees, then stream it into the egg whites while the beaters are are running. Continue to beat until the candy is thick, shiny and holds its shape. (It's like really thick frosting)

Spread into a wax lined 9x9 pan and let cool about 1 hour until fully set.
