Sugar Cookie Rice Krispy Treats


Holidays. They are supposed to be the season of love, kindness, charity etc, etc.. right? I had an experience the other day that really tested my goodwill towards man.

So I'm at the grocery store (surprise!) and it's a madhouse. The lines are terrible. For some reason everyone's inner Betty Crocker comes out during the holidays. People that haven't turned on the oven in a year are all of a sudden whipping out things like stuffed goose, cheese souffles, gingerbread trifles... meaning twice the normal grocery store traffic.

I get in line and wait... and wait... The best part is I got my little buddy strapped to me in one of those baby carriers and she was making sure the whole store knew she was tired. I try to nonchalantly stare at the magazine rack as if a screaming child is perfectly normal.

Anyhoo, the next thing I know some lady comes out of nowhere and wedges herself in front of me. Whoa! Really? You're just going to pull in front of the girl with the crying baby and pretend you didn't see her? Anyone within a 50 fit radius knows I'm here, trust me.

So I do the mature thing: let out some loud sighs until the lady got the hint. She finally turns to look at me and then has the nerve to say, "Oh you can go ahead of me honey." I'm telling you it took all the holiday charity in my to say thank you. What I really wanted to say was, "Look lady, I was ahead of you in the first place! Don't try and get all Mother Theresa on me!" But instead I politely smile and step ahead of her, again.

Oh well. So in honor of the holiday cheer I seem to be lacking I have made classic cut-out sugar cookie rice krispies. Nothing more traditional then an overly frosted cookie shaped like Santa or a Christmas tree, right? Bonus, they even taste like a real sugar cookie due to the cookie mix I added. Win-win!  Peace on Earth and Goodwill to men!

Sugar Cookie Rice Krispy Treats

3 Tbsp butter
1/2 cup Betty Crocker dry sugar cookie mix
1 tsp vanilla
6 cups marshmallows
6 cups krispies
Frosting (homemade or in a can)
food coloring, sprinkles, etc for decorating

Pour the rice krispies in a large mixing bowl. Set aside.

Melt the butter in a saucepan over medium high heat until melted. 
Turn the heat down to the lowest setting and add the marshmallows. Stir until the marshmallows are mostly all melted (this will take a few minutes--low and slow is key for perfect texture). Add in the sugar cookie mix and vanilla and finish melting.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump everything into a greased large cookie sheet pan. (normally I make my krispies in a 9x9 pan because I like them thick. But since these are supposed to be imitating sugar cookie I made them into a thin layer for cutting) Let it sit for about 5 minutes, then with greased hands go in and flatten the top. 

Allow them to cool about 20 minutes, then cut out your favorite holiday shapes. Eat the excess pieces. Frost and decorate cutouts as you like. Enjoy!

  1. Oooh. Line jumping annoys the heck out of me!! I get all anxious and fidgety. These are gorgeous! Love how you frosted them.
