Generally I am not a first mover/early adopter on anything. When I was a kid I was always a year or two behind the trends. By the time I got my first Pog they were already a thing of the past, I totally missed Beanie Baby train, I was still carrying around the Five-Star velcro binders when all my friends had moved on to the plastic hard covered ones... even now I just saw the Gangnam Style music video for the first time this week. Supposedly that was so 6 months ago.
So while Nutella may be old news for many, it's a new found love for me. I don't know why I missed the boat for so long. But I've decided to make up for lost time by consuming excess amounts of this stuff in the last 24 hours. (note to self: buy the 26 oz jar next time... 13 oz just doesn't cut it)
As you know, any love of mine always makes its way into a rice krispy treat. Nutella is no exception. You are going to love these. They have a thick, almost fudge-like texture, while still managing to maintain their crunch. My husband, the great Taste Tester himself, swore these had the best texture of any of my recipes to date. (Although he may have just been saying that because I was mad at him at the moment--he'd just tracked dirt on my freshly mopped floors!) So whip a batch of these up tonight! Then come back and tell me if my husband was telling the truth or just trying to appeased me...
Nutella Rice Krispy Treats
3 Tbsp butter
1/2 cup Nutella (Hazelnut spread)
6 cups marshmallows
1 tsp vanilla
6 cups rice krispies
Pour the rice krispies in a large mixing bowl. Set aside.
Melt the butter and Nutella together in a saucepan over medium heat until melted. Turn the heat down to the lowest setting and add the marshmallows. Stir until the marshmallows are almost all melted. (this will take a few minutes--low and slow is key for perfect texture) Add the vanilla and continue melting.
Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and press into the pan with lightly greased hands. Allow them to cool about 20 minutes, then enjoy!
