Graham Rice Krispy Treats

So once upon a time I went to college at a school called BYU. Many moons ago. Like any good university, BYU had an on site school creamery. A place I can say I spent many a night downing my fair share of ice cream concoctions. Now I'm totally in love with trying new flavors, I really don't like having the same thing twice, but there was one flavor I could always count on in my ice cream creations: Graham Canyon.

Yep you guess it, a graham cracker flavored ice cream. This stuff was amazing. Surprised? Graham Flavor? Yes my friends, because it went perfectly with pretty much every other flavor/topping available. Chocolate, Peanut Butter, Coconut, Cookies N Cream, Chocolate Chip, Cookie Dough.... And then toppings. Hot fudge, caramel sauce, marshmallow cream, nuts, brownie chunks, cookie pieces, candy bars... you name it Graham Canyon tastes good with it. It's like the Blood Type O of ice creams. It can work with anything.

So today I decided to transform this love into a rice krispy treat. No frills or gimmicks, I'm talking straight graham cracker flavor. Using a 50/50 blend of rice krispies and golden grahams, we create a graham flavored haven. (you can't use just Golden Grahams, otherwise the treats get too hard... Plus it's not really a rice krispy treat then either) Then, just to really top things off, we throw in some graham cracker crumbs. Perfect. Pour yourself a tall glass of milk, sit back, and enjoy your graham flavored heaven.

Graham Rice Krispy Treats

4 Tbsp butter
6 cups marshmallows
1 tsp vanilla
3 cups rice krispies
2 cups Golden Grahams
1 cup graham cracker crumbs (you can just crush up more golden grahams if that's all you have)


Mix together the rice krispsies, Golden Grahams, and graham cracker crumbs. Set aside. Melt the butter in a saucepan over medium heat. Turn the heat down to the lowest setting and add the marshmallows. Stir until almost totally melted, then add the vanilla extract. Continuing stirring until the marshmallows are all melted, slow and steady people, slow and steady...

Once fully melted, take them off heat and pour over the rice krispy mixture. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and light press into the pan with greased hands.  Allow them to cool and set about 20 minutes.

  2. Going camping this weekend and don't want to pack all the fixings for s'mores, so I added some chocolate to these bad boys and am calling them "traveling s'mores" - thanks for the recipe!!

  3. HI can these graham crispy treats be frozen? will they get soggy if used with other layers in a frozen dessert when it's moved to fridge for thawing?
