Buttermint Rice Krispy Treats

Guess what guys? It's my anniversary this week. The blissful years of marriage are sailing by. It seems like yesterday we were just engaged... have I ever shared my engagement story with you guys? I think I should, it's a good one...

It was Christmas Eve. I was home from college and my husband (then boyfriend) was supposedly 2 states away with his family. (He'd given me some spiel about not being able to get away from work, etc, etc) Anyhoo, we had just finished eating dinner when my brother claimed he heard a knock of the door. I checked and sitting there was a note with a rose telling me to drive down to the beach--the place my husband and I first met. There I'd find another clue. Oh, how romantic. By then I knew something was up, so I told my family adios and left.

I got to the beach and it was dark and drizzling. Not the most ideal conditions but whatever. I headed to the lifeguard tower to find my next "clue" and found... nothing. Zip. I wandered around searching for who knows what. Finally after 15 minutes I gave up and called my husband. He didn't answer. Ahem. Now what? I was cold and wet. I was supposed to be happily drinking eggnog and opening presents, and instead I was trying to avoid eye contact with the homeless bums camped out 20 yards away. Psh. Whatever, forget this romantic mumbo jumbo, I was going home.

I started trudging back to my car, only to see my knight in shining armor zoom into the parking lot. He jumped out and sprinted towards me. As he got to me he was laughing and out of breath. All I remember hearing is, "Oh my gosh, I have got a funny story for you!--But no--Wait! Uh first I have a question... Will you marry me?" Well... not the most eloquent proposal I'd ever heard, lucky for him I found it in my heart to say yes. Although I'm still waiting to this day for my Bachelor type proposal where he spends 20 minutes describing how beautiful, wonderful, gorgeous, etc I am...

Mallow and Co: Buttermint Rice Krispy TreatsAfter a few more minutes I finally got the whole story. He was going to do this trail of clues leading me along our memorable dating spots, finally ending with a pile of rose petals and him proposing. Only problem was his partner in crime was my brother, and as you can guess, they weren't on the same page. My husband thought my brother was going to call him when I left so he could set the clues up, my brother thought he'd already done that, etc, etc... So that's how my husband ended up at the 7-11 snacking on a candy bar while I wandered the rainy beach for 25 minutes. Nice. That's one for the romance novels. He didn't even bring me a candy bar.

My brother will give an even more flamboyant version with my husband eating Del Taco watching a football game for an hour, while my husband will claim it was mere minutes before he arrived. Good thing I'm honest. So today, in honor of my anniversary, I've made a Buttermint Rice Krispy Treat. Yes, those melt in your mouth goodies that always manage to show up at weddings. I don't know how. But someone always remembers to bring them. These are actually a really great addition to rice krispy treats. They are similar to the Divinity Treats I posted earlier, just without the work of making Divinity! Whoo Hoo! The buttermints literally melt in your mouth as you munch through these krispy treats and add a sugary goodness that I can't describe - seriously a perfect addition!

Mallow and Co: Buttermint Rice Krispy Treats

Buttermint Rice Krispy Treats

4 Tbsp butter
6 cups marshmallows
1 tsp vanilla
5 1/2 cups rice krispies
1 cup Buttermints, crushed


Pour the rice krispies and buttermints in a large mixing bowl. Set aside. Melt the butter in a saucepan over medium heat. Turn the heat down to low and add the marshmallows and stir until the marshmallows are mostly all melted. Add in the vanilla.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and lightly press into the pan with greased hands. Allow them to cool about 20 minutes and e
