Mexican Chocolate Rice Krispy Treats

It's that time of year again: Cinco de Mayo! American's made up holiday for the Mexico! Whoo hoo! We love celebrating so much we'll make up holidays for other cultures then adopt them as our own! I'm all for it, All I need is some chips, a bowl of guacamole, and a panful of these spicy chocolate treats!

Has everyone had or at least heard of Mexican Chocolate before? It's a chocolate usually prepared with an array of spices to give it a unique flavor. Anything from cinnamon, to allspice, to chiles, etc. And since chocolate has such a long history in Mexico, I figured it was only fitting to make a treat based on it

Can I tell you I actually made these treats 3 different times trying to get the spice level right? I swear couldn't even taste any spice in my first 2 batches! It wasn't until my third time around that it dawned on me I had been sick earlier in the week and my taste buds probably weren't all back yet. Ha ha. When my husband, the great taste-tester himself, finally came home from work, he confirmed that there was in fact a hint of spice and that yes my taste buds must be shot. There's a testimony of the importance of taste testers!

Normally I am not much of a spice person, but these may convert me. The chocolate is definitely the overriding flavor, but you do get that little hint of spice that just makes you want more. I don't know why or how to describe it but chocolate and heat really go well together. So go get out your sombreros and whip up a batch of these treats for your Cinco de May party I know you're having. I may have to make a 4th batch myself in honor of the day...

Mexican Chocolate Rice Krispy Treats


5 Tbsp butter
6 cup marshmallows
1/2 cup chocolate chips
1 tsp vanilla
1/2 tsp cinamon
1 tsp chili powder
6 cup cocoa krispies

Pour the rice krispies into a large mixing bowl and set aside. Melt the butter and chocolate chips in a saucepan over medium heat. Once melted, turn the heat down to low and add the marshmallows. Stir until the marshmallows are mostly all melted (this will take a few minutes--low and slow is key for perfect texture) then stir in the vanilla, chili powder, and cinnamon.

Once fully melted, take them off heat and pour over the cocoa krispies. Stir lightly to combine. Dump the mixture into a greased 9x9 pan. Let it sit for about 5 minutes, then with greased hands go in and flatten the top. Allow them to cool about 20 minutes and enjoy!

  1. Hi! A friend pointed me to your blog b/c she knows I can't resist a marshmallow-based cooking, and I am blown away by all your creative recipes. Tried out the Reese's Peanut Butter Cup one this weekend and they were a big hit.

    One (maybe dumb) question for you: what if I want to make this delish-sounding Mexican Chocolate Treat recipe (or any of the other chocolate-involving recipes), but I don't have Cocoa Krispies? Like if, hypothetically, I have a ginormous box of regular Rice Krispies that I really need to use? (Ok, not really hypothetically... truly. Got carried away at Costco.) Is there something I can add to fudge it (ha, punny!), like some cocoa powder at the same time as the spices? Or would that mess things up and make the mixture too dry/sticky? How about some chocolate milk or hot cocoa? Any substitutions & amounts you've tried out or suggest?

    1. Ha ha, you sound like me - I have an entire cupboard dedicated to my overstock of rice krispy treat ingredients ;) But yes, you can totally still get a chocolate flavor. You can: (1) use Kraft's chocolate flavored marshmallows instead of normal ones, or (2) mix in a small box of chocolate pudding in while you are melting the marshmallows, or (3) add cocoa powder - I'd guess about 2-3 Tbsp to your melted marshmallows.

      I don't think it will effect the texture but feel free to add up to another 1/2 a cup or so of marshmallows if you want to be safe :) Hope one of these work out! Thanks for your comment!

    2. Super! Thanks so much for your speedy reply. I will try #2 or #3 (I also have a few too many bags of plain marshmallows on hand :P ), and the tip/reminder about adding extra marshmallows is gold.

  2. Great recipe. Mexican treats are really delcious and have a characteristic flavor, they are also very nutritive too. Casa Adelita makes very interesting confectionery with them.
