So moving on. Happy Mother's Day!!! Don't some foods just invoke memories of certain people? For example, Rocky Road ice cream will always make me think of my mom.
Every year for her birthday my mom would request rocky road ice cream to go with her cake. Every Year. I would always moan and groan... "Ahhh Mom... Rocky Road!? That's the worst flavor ever! (this is coming from a kid who requested rainbow sherbet for about 10 years in a row... so my culinary opinion didn't count for much) Anyhoo, despite my dislike, it's always been my mom's favorite.
Now, many years later, I am older and wiser and realize the absolute deliciousness of creamy chocolate mixed with marshmallows and nuts. Salty and Sweet, Creamy and Crunchy? What's not to love? Exactly. So for Mother's Day today, I decided to honor my mother with a rice kripsy treat dedicated entirely to her: the Rocky Road Rice Krispy Treat. I know, I'm such a great daughter. Who wouldn't want a rice krispy treat made for them? cough cough... anyways...
So these goodies start with a Cocoa Krispy base to mimic the chocolate ice cream of course. Then we use some chocolate marshmallows just to enhance the chocolateyness of it all. Top it off with the necessary peanuts and marshmallows and you're ready to go. Oh Boy - yum! Here you go mom, I know no better way to say I love you then this ;)
Rocky Road Rice Krispy Treats
5 Tbsp butter
6 cups chocolate marshmallows
1 tsp vanilla
5 cups cocoa krispies
1/2 cup marshmallows
1/2 cup peanuts
Mix together the cocoa kripsies, peanuts, and 1/2 cup marshmallows. Set aside. Melt the butter in a saucepan over medium heat. Turn the heat down to the lowest setting and add the chocolate marshmallows. Stir until almost totally melted, then add the vanilla extract. Continuing stirring until the marshmallows are all melted.
Once fully melted, take them off heat and pour over the rice krispy mixture. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and light press into the pan with greased hands. Allow them to cool and set about 20 minutes. Enjoy!

DeleteThese look delicious! But I might have to swap out the peanuts for almonds. ;) The Rocky Road I always get has almonds in it.
