Berry Cobbler Rice Krispy Treats
Um, so I'm pretty sure my husband and I have a distorted view of healthy eating. Here's a recent conversation we had (as in last night):
Me: "Hey, I'm headed to the grocery store - anything specific you want or need?"
Husband: "Double Stuffed Oreos!"
Me: "No way, those aren't even slightly healthy!"
Husband: "Ok... how about just regular Oreos then?"
Me: "... Really?"
Ahhh... issues. And it's not just him. As a matter of fact I think my love of baking desserts has turned him to the dark side. I've already given up hope on myself. I mean, I'm pretty sure I recommit to a sugar detox about once a month. My longest record so far has been about 5 hours... again, issues. For example in my mind these Berry Cobbler Rice Krispy Treats are healthy... I mean they have berries right? Or maybe just berry flavored jello... ?
Well, regardless, these treats are a mock version of a delicious berry cobbler. I used some raspberry flavored jello mix (although strawberry would be delicious too) to flavor the mallows, then topped it all of with some yummy crunchy granola. Easy Peasy! Bonus I didn't even have to use my oven and turn my house into more of a sauna than it already is! Win-win! So go whip out your mallows and try these goodies today!
Berry Cobbler Rice Krispy Treats
4 Tbsp butter
6 cups marshmallows
1small dry jello mix (strawberry or raspberry flavored)
6 cups rice krispies
2 cups your favorite granola cereal
Pour the rice krispies in a bowl and set aside. Melt the butter in a saucepan over medium heat. Once melted, turn the heat down to low and add the marshmallows. Continuing stirring until mostly all melted, then add in the dry jellow mix and stir to combine.
Once fully melted, take off heat and pour over the rice krispies. Stir lightly to combine. Lightly press into a greased 9x9 pan. Sprinkle your granola all over top, lightly press it in so it sticks to your treats. Allow to fully set about 20 minutes then enjoy!
