Sometimes you only want a rice krispy treat for yourself. Party of one. I respect that. There are lot's of times when I want to eat by myself without sharing. Lately that's something that doesn't happen very often. My little girl is a strong supporter of sharing when it comes to whatever I'm eating. For the life of me I can't get her to eat anything I put on her plate, but if it's going into my mouth it must be good. I digress, back to desserts.
Now I know we've all seen the single serving microwave mug cakes, cookies, etc. Today I bring you the single serving rice krispy treat. This is actually the size of my test batch that I make every time I try a new recipe. That way I don't have to toss an entire pan of treats if I botch up a new recipe. As well it limits the amount of rice krispies I consume. Because I got to look good you know. I'm kind of a big deal. (cough cough)
Anyways enough chit chat. Here are the goods. The single serving rice krispy treats. I find a mini loaf pan is the perfect size for these, but feel free to simply attack it with a spoon straight from the bowl.
Single Serving Rice Krispy Treats
**I do have to admit this is actually a pretty big single serving... it's more like a 1 1/2 serving... I think. I have portion disorder when it comes to sweets...
1/2 Tbsp butter
1 cup marshmallows
a drop or two of vanilla
1 cup rice krispies
Melt your butter in a small pan over low heat. Add in the marshmallows and stir until mostly all melted. Add in vanilla. Remove from heat and stir in your rice krispies. Pour into a greased mini loaf pan and allow to cool. Enjoy!
**Quick and Easy Variations:
Peanut Butter: Melt 1 Tbsp of peanut butter in with your butter
Nutella: Melt 1 Tbsp of Nutella in with your butter
Chocolate: Use cocoa krispies and mix in 2 Tbsp of chocolate chips with the cereal
Cake Batter: Add 1 Tbsp any flavor dry cake mix in with your marshmallows (sprinkles always make things better too)
Coconut: swap out coconut extract for your vanilla and mix in 2 Tbsp of toasted coconut flakes with the cereal
