Rice Krispy Treat Bark

Have I ever told you guys about my list? My master rice krispy treat flavors list? It's kind of my pride and joy...

Mallow and Co: Rice Krispy Treat Bark

Currently I have 122 new flavor ideas that I still need to make sometime. 122! Yes really. I don't even know how I have that many! I should have taken a snapshot of it for you guys. (it's a beautiful excel spreadsheet work of art... nerd alert, nerd alert). Anyways so my point is about 90% of the time when I see a blogger post a rice krispy treat recipe, it's already on my to-do list. Except today's: Rice Krispy Treat Bark.

Mallow and Co: Rice Krispy Treat Bark

This treat actually wasn't a Mallow and Co original. This genius idea I've seen floating around several blogs. Rice Krispy Treat Bark? I mean honestly. A thin marshmallow krispy base topped with a thick chocolately shell? These things sounded so delicious I knew I had to make them, regardless of whether I was being a copycat or not. Besides, isn't imitation one of the best forms of flattery?

So today I stayed pretty basic, a regular ole rice krispy treat base and straight milk chocolate coating. But by all means, you could get fancy with yours. Try peanut butter or maybe butterscotch rice krispy treats? Use white chocolate or salted chocolate for your coating? Let's be honest, probably the only dessert more versatile and simple then rice krispy treats is chocolate bark. You just can't mess this stuff up! So get out those mallows and whip up a panful of these delicious snacks!

Rice Krispy Treat Bark

2 Tbsp butter
2 cups marshmallows
2 cups rice krispies
2 1/2 cups chocolate chips

Grease a large cookie sheet (or layer it with a nonstick baking mat) and set aside.Put your rice krispies in a bowl and set aside.

Melt butter in a saucepan over medium heat. Add the marshmallows and turn the heat down to low. Stir until totally melted, then pour over rice krispies. Mix well. Spread out your mixture over your greased cookie sheet to a very thin layer. I'm taking thin people. Like to the point where I had gaps even between some of my rice krispies. Lets be honest, it's going to get filled up with chocolate anyways so you might as well have as many gaps as possible. (also, having well greased hands/spatula really makes this step easier). Se this aside to harden.

Meanwhile melt your chocolate in a double boiler or in the microwave at 20 second intervals (stirring in between each one). Once melted, pour evenly over your rice krispy layer. Allow to harened fully. Then break apart and enjoy!
