Just thought I'd warm you up for today’s post with some tunes. Funny story about that song. So my mom. (love her, everybody should meet my mom) I was with her one day when this song came on the radio.  The chorus comes on and she gets real quiet for a second then turns and asks me:
"What are they saying right there?"
"I ain't no hollaback girl."
"Holla-back-girl? Are you sure? I've always thought they were saying 'hold the bat girl'. Isn't this song about a game or something? They mention a track... And what is a hollaback girl anyways?"

I don't even know if I responded I was laughing so hard. Ahhh memories. Not that that had anything to do whatsoever with my recipe today, just thought I’d share. Moving on.

Today I bring to you an American Iconic dessert: The Chocolate Covered Banana. George Michael would be so proud. This little beauty, I promise one bite and you'll swear your eating a chocolate covered banana (just in a delicious ooey gooey rice krispy form) My husband, the great taste tester himself, agreed that despite his no so lovey feelings for bananas, this baby tasted just like one. But better. In a way only marshmallows and butter can make things better.

This treat is composed of a banana cream flavored krispy base (which even amazed me with it's 
serious banana flavor), covered in a rich milk chocolate shell, and (if you choose) rolled in a yummy layer of sprinkles or nuts (which I obviously used neither since I didn't have nuts OR sprinkles in my entire kitchen.... who am I???). Anyways, Chiquita may hate me for this, but you may just never need a real banana again.

Chocolate Covered Banana Rice Krispies

5 Tbsp butter
6 cups marshmallows
Tbsp dry banana cream pudding mix
1 tsp vanilla
6 cups krispies
chocolate magic shell (recipe below)
sprinkles and/or nuts (optional)

Pour the rice krispies in a large mixing bowl and set aside. Melt the butter in a saucepan over medium heat. Once the butter is melted, turn the heat down to low and add the marshmallows. Stir until the marshmallows are mostly all melted (this will take a few minutes--low and slow is key for perfect texture) then stir in the banana pudding and vanilla.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump everything into a greased 9x9 pan. Let it sit for about 5 minutes, then with greased hands go in and flatten the top. Allow them to cool at least an hour. 

Cut krispies into desired shape (square, rectangle, circle, bananas...etc) You can even get really fancy and stick them on a stick too (but only if your super crafty like that). Then dip krispy pieces into chocolate magic shell and roll in the topping of your choice. Set on a piece of wax or parchment paper to dry. Enjoy!


Chocolate Magic Shell
1 1/2 cups milk chocolate chips
1/2 tsp Coconut Oil

Melt chocolate chips and coconut oil in the microwave at 20 second intervals, stirring in between each one until fully melted and smooth.

  3. I always think music is so funny when you can't figure out the lyrics. I kind of just muddle my way through with whatever I think they are. These treats sound awesome!
