Egg Nog Rice Krispy Treats

Today I am going to share a priceless piece of advice: Marry a good man.

My daughter is not a good sleeper. Have I ever mentioned this? She does her best to make sure my husband and I do not get our 8 hours every night. And to her credit she's pretty good at it.

So last night she had a pretty rough one. She went to bed at her normal time and slept until around midnight when I fed her. Then sometime around 3am she started crying again. Or maybe it was 2am. I honestly don't know. I have been getting very good at tuning out her cries between the hours of 9pm-6am. But during my waves of semi-consciousness I could tell she was crying a lot and my husband was up with her.

Sometime around 4:30am my maternal instincts were resurrected and I got up to feed her. But after that I was out again until my husband woke me at 6am to say he was leaving for work.

Feeling guilty later this morning I finally texted him asking how long the girl one was awake last night. Here was his response:

"Here's the breakdown:
3:30- Callie starts crying. 
4:00- Dad puts her to sleep. 
4:10- Callie starts crying. 
4:11- Dad fails at rocking her to sleep. 
4:30- Mom wakes and feeds her to sleep. 
4:40- Callie starts crying.  
4:50- Dad threatens to kill her and goes to her room.  
5:45- Callie isn't dead and dad finally gets her to sleep. 
6:00- Dad goes to work." 

Oh Man. Poor Guy. So this experience is what my priceless advice is founded on today. Marry Well. Marry a man who will wake up with your screaming child while you enjoy blissful sleep. You can quote that. Frame it. Modge podge it.

Anyhoo so I've decided there is only one way to thank him: make some Eggnog Rice Krispies.

My husband Loves eggnog. Loves it. I sent him out to pick up some milk for me a few weeks ago and he came back with a carton of eggnog. This was in October. As in 2 months before accepted eggnog season. Those things couldn't have been on the shelf more then 24 hours before he pounced on them.

So I picked up some of this artery clogging goodness from the store and got to work. After several failures learning experiences I decided to replace most of the butter with the eggnog then reduce it down slightly. Bingo. So here you have it. Eggnog flavored treats to thank your special someone. Mmmm. Thank you husband.

Egg Nog

Egg Nog Rice Krispy Treats

1 Tbsp butter
4 Tbsp Eggnog
1/4 tsp nutmeg (optional, but I liked it)
6 cups marshmallows
6 cups krispies

Pour the rice krispies in a large mixing bowl. Set aside.

Melt the butter and eggnog in a saucepan over high heat and bring to a boil. Boil about 30 seconds to 1 minute until 
slightly thickened and reduced . Turn the heat down to the lowest setting and add the marshmallows. Stir until the marshmallows are mostly all melted (this will take a few minutes--low and slow is key for perfect texture). Add in the nutmeg and finish melting.

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine. Dump everything into a greased 9x9 pan. Let it sit for about 5 minutes, then with greased hands go in and flatten the top. Allow them to cool about 20 minutes. Enjoy!

  1. Oh. My. Gosh. I think I love you! These are amazing, as is your husband. It really is true - when they're good with the kids you realize how lucky you are! Mine is the same and I am SO thankful. So is my kid. Otherwise the poor thing would be horribly neglected. ;)

  3. These look and sound so Delish-ish! I know the spelling is WRONG! BUT OMG! Once I leave work I am going to grocery store and start making these along with 2 other recipes I found. Now can you make one with Snickers candy and let me know how they taste? I think you were heaven sent because I was thinking about making these and selling. Hey since you are a Stay @ Home mom maybe you can do the same thing and set up @ a Flea Market. Just a suggestion.
