I mean I love my children more than anything in the world, but sometimes I'm not sure if I have what it takes to raise these 3 munchkins. I tried to write down some of the funny things they said/did this week (because you know everyone tells you you need to do it) and here were some of the good ones:
1.) "Mom does this have salt in it?" (as my 2 yr old vigorously shakes the salt shaker all over her little brother's head)
2.) My oldest was doing Blast Offs from the top of our stairs. Midway through one of them she ran into Twin A (who was halfway up the stairs) who then ran into Twin B (following close behind) and they all steamrolled down to the bottom (and in case you're wondering where I was, I was using our bathroom at the top of the stairs pointlessly yelling "STOP STOP STOP!!!!")
3.) "Mom you are just like Cinderella!" (At that moment I was scrubbing out the toilet in our bathroom. So I guess I'm the less glamorous part of the Cinderella story...)
4.) "Mom I don't want jelly on my sandwich"
"Yes, you do, it makes it look pretty, like a princess sandwich."
"Oh ok, yeah I want jelly!" (Reasoning with a 2 year old)
5.) "Mom look at me, I'm coloring the car! With a rock...." yeah, my minivan is now beautifully decorated with scratches
6.) "Mom are you talking to yourself? Oh, cause that's what moms do..." (yes child, you just wait)
Ah... I have so many more. Like literally I think everyday I could make a list like this. It just never stops, the good, the bad, and the ugly.
Anyhoo, enough of that. I've got a treat today that lots of you have probably seen floating around the pinterest world. At least I've seen it. Brown Butter Rice Krispy Treats. I may be late to this boat but I'm coming on strong! I'm a fan of brown butter. In cookies, bars, etc. It adds that little extra umph to things doesn't it?
So it would only make our basic rice krispy treat that much better right?? These turn out with a slightly different flavor that's hard to pin point unless you knew what it was. Take them to your next potluck and everyone will wonder how you made a basic rice krispy treat taste so good.
Now go make some of these for yourself. You deserve it. I deserve it. Well I probably deserved about 1 of these... 5 pieces later and I'm probably past my portion but whatever.
Brown Butter Rice Krispy Treats
Yield: 9-12 servings | Total Time: 30 minutes
- 6 cups rice krispies
- 6 Tbsp butter
- 1 tsp vanilla
- 6 cups mini marshmallows
Pour rice krispies in a bowl and set aside,
In a large pot, melt butter over medium-low heat. It's going to melt, then foam up, then turn clear golden yellow and then finally start to turn a brown color. It will also start to smell nutty. Watch it and stir frequently. (Here is a step by step link to browning butter if you're a visual learner)
Once your butter is brown, turn the heat down to low and add in the marshmallows, stirring until melted. Mix in vanilla, then pour marshmallow mixture over rice krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and lightlly press into the pan with greased hands. Let them fully set another 20 minutes, then enjoy!
