Pistachio Rice Krispy Treats

So I've had this box of pistachio pudding sitting on my cupboard for about 3 months now. I bought it back in November, thinking how fun green pistachio krispy treats would be for St Patricks Day. Don't ask me why I bought them so early. In case of a major pistachio shortage? What if the pudding factory went on strike?

Anyhoo, so much for planning ahead. I nearly forgot about them until this morning while I was rifling through the cabinets looking for my molasses (I swear there are leprechauns that come and reorganize my cupboards at night... ) when I spotted it. Oh no! I've only got like a week and a half until St Pattys Day! I've got to get on this pronto!

15 minutes later I was melting up a big pot o' marshmallows and pulling out my rice krispies. These things are delish! It's really been a long time since I've have anything pistachio flavored but I've definitely been missing out in life! (my husband thinks it's important to note that these are not actually real pistachio flavored... like they aren't salty... they are fake pistachio flavored... in a Jello Pudding mix way. Which is the only way I know anyways. So I'm not sure why it's important I make this distinction, but I'll do it for him. Moving on.)

So these treats have that delicious pistachio pudding flavor throughout the marshmallows. Then there's a pistachio flavored white chocolate drizzle on top. The pudding really pumps up the ooey gooeyness of the treats. So good. So soo good. I couldn't stop eating them. You definitely need to make these for St Patty's Day. Make some for the leprechauns.  I'm going to leave them out as a peace offering to the little twirps who keep rearranging my cupboards. Now excuse me, I need to get back to looking for my molasses...

Pistachio Rice Krispy Treats
Notes: These have a delicious pistachio flavor thanks to the pudding mix. However I felt the green color didn't come through enough for St. Patrick's Day so I decided to add some food color to my white chocolate drizzle. You can leave it out if your watching your Green No. 3 intake. 

4 Tbsp butter
6 cups marshmallows 
1 3.4 oz package of pistachio pudding
1 tsp vanilla extract
6 cups rice krispies
2 squares of Almond bark (vanilla flavored)
green food coloring (optional)


Pour the rice krispies in a large mixing bowl and set aside. Melt the butter in a saucepan over low heat. Once melted add in the marshmallows. Stir until they are mostly all melted (this will take a few minutes--low and slow is key for perfect texture) then stir in the vanilla and dry pudding mix(**reserve 1 Tbsp of the dry pudding mix for your white chocolate drizzle)

Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine, then dump into a greased 9x9 pan. Allow to cool 5 minutes, then press into pan with greased hands. Meanwhile melt your almond bark in the microwave in 30 second intervals, stirring in between each one until fully melted. Stir in your reserved 1 Tbsp of pudding mix and a drop or two of green food coloring. Drizzle over cooled rice krispy treats and enjoy!

    1. Ha ha, thanks Gloria! I may have a skewed view of what is normal, but I totally think eating a whole batch of rice krispy treats is acceptable :)
