As I'm sure many of you can tell, I am a very health conscientious person. Ahem. Maybe not. I try though. Despite how it might seem, I do try. And I know that many of you out there are much better than me. So today I decided to step things up a bit. I pulled out the ginormous container of protein powder I bought on a health fluke one day and decided to put it to use. In a rice krispy treat. Because we all know a spoonful of sugar helps the medicine go down. Or the protein powder. Anyhoo...

Toasted Marshmallow Rice Krispy Treats
Toasted Marshmallows, in my list of favorite foods they are second only to ice cream. Maybe peanut butter too... it's a tie... they'd be partners in a 3-legged race. Anyways, so I love toasted marshmallows. So WHY In The World have I never put Toasted marshmallows in a rice krispy treat?!? I Know.

Butter Pecan Rice Krispy Treats
Now first I must say these are not the most beautiful treats I've ever made. I guess you can't tell by the pictures, but they have a funny brownish tinge from the pecan butter. But you know, some things you just can't judge by appearance: Susan Boyle... McDonald's dollar menu... My high school yearbook photo. Ahem. Yes, you definitely can't judge a book by it's cover. These treats are good. Period.

Coconut Rice Krispy Treats

Coconut Rice Krispy Treats
Notes: If you want to go really crazy coconutty you could use coconut oil in place of the butter for these. Only if you’re crazy though. You sane people just stick to the butter :)
4 Tbsp butter
6 cups marshmallows
1 1/2 tsp coconut extract
1 1/2 cups toasted coconut (I toasted mine for a few minutes on the stove top on medium heat)
5 cups rice krispies
Pour the rice krispies and toasted coconut in a large mixing bowl and set aside. Melt the butter in a saucepan over low heat. Once melted add in the marshmallows. Stir until they are mostly all melted (this will take a few minutes–low and slow is key for perfect texture) then stir in the coconut extract.
Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine, then dump into a greased 9×9 pan. Allow to cool 5 minutes, then press lightly into pan with greased hands. Allow to fully set (about 20-30 min) and enjoy!

Tagalongs Rice Krispy Treats
I am slightly disgruntled right now. It just so happens that I spent an afternoon whipping up and photographing 2 new rice krispy treats, only to put my memory card in my computer later that evening to find 0 pictures. None. I don't know what happened. It's like I never even took them! Was I dreaming? I could see crumbs on my photo shoot area so I knew I actually did take the pictures. And I couldn't even go back and retake them because all the rice krispy treats had already been eaten. Lame.
