Key Lime Pie Rice Krispy Treats

My most recent embarrassing moment:

Sunday afternoon my neighbor was walking by my house and saw this: Me, laying on my garage floor (still in my dress and heels from church), taking pictures of a pan of rice krispy treats sitting on a 2x4 laying next to me. Awkward...

How do I explain myself in that situation? "Um, hi. I write a food blog. And it's all about rice krispy treats. And I need to take my pictures in good light... and the only room in my house that gets good light is my daughter's, but she's taking a nap right now... and I have to go deliver these to someone so I don't have time to wait for her to wake up... so, uh, nice day yeah?"'

Silence.

Ah, sometimes you just got to take one for the team right? That one was for you guys. I'd do anything for you. And for these treats. These Key Lime Pie Rice Krispy Treats. In honor of St Patrick's Day of course. I got to get all the green out of my system before this holiday is up you know? My mom stopped by my house the other day to babysit my child (she's the best) and decided to bring me a stash of these lime marshmallows she found. And since I never pass up the opportunity to make rice krispy treats, I took on the challenge!

These treats definitely patch a tart punch! Similar to a Key Lime pie, you get that oh so delicious citris taste from the lime marshmallows. I threw in a crumbled graham cracker crust because you can't have pie without crust after all. The cinnamon/sugar of the crust pieces adds these little surprise bites of sweetness that cuts through the tartness of the lime. And then the white chocolate on top just makes everything better. These are perfect little green treats for St Patrick's day which, if you didn't know, is just around the corner (And I still have my Valentines Day decor up!) Enjoy!

Notes: So I wasn't sure how to best incorporate the graham cracker crust. As you can see from my pictures I broke it up and mixed it in with the rice krispies   However if you want to be really cutsey you could dump the rice krispies on top of the graham cracker crust and really make it look like a pie (similar to my cherry pie rice krispies ) Either way works and is delicious!

4 Tbsp butter
5 cups lime marshmallows** 
1 tsp vanilla extract
5 cups rice krispies
1 graham cracker crust, broken up (homemade or store bought)
2 squares Almond Bark, vanilla


Mix the rice krispies and graham cracker crust pieces in a large mixing bowl and set aside. Melt the butter in a saucepan over low heat. Once melted add in the marshmallows. Stir until they are mostly all melted (this will take a few minutes--low and slow is key for perfect texture) then stir in the vanilla.


Once fully melted, take them off heat and pour over the rice krispies. Stir lightly to combine, then dump into a greased 9x9 pan. Allow to cool 5 minutes, then press into pan with greased hands. Meanwhile melt your almond bark in the microwave in 30 second intervals, stirring in between each one until fully melted. Drizzle (or dollop... I was going for a whipping cream look in my pictures) over cooled rice krispy treats and enjoy!


**These were Campfire brand marshmallows - my mom actually saw them and picked them up for me. If you can't find these anywhere, you can just use 1/2 of dry lime jello mix instead. You get the same flavor.

I have very similar moments when my mail lady delivers the mail and I have my whole photo set up right by the window where she can totally see me....although it has happened so many times that I think she expects to see me there now. I just saw those key lime marshmallows at Walmart and almost got them...now I am kicking myself for putting them back. Love the graham cracker pieces in the krispies!!

  3. I bought those same marshmallows! These look SO good. And I always wonder what people think when they come over and see my set-up and overflowing prop counter! Ha!

  6. Oh and I used coconut oil for half the butter, perfect! Drizzled with cream cheese on top...
